Ingredients
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup shortening
- 2 eggs
- 2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 cup coconut
- 3 cups quick rolled oats
- 1/2 cup nuts
Preparation
Step 1
1. Preheat oven to 375 degrees F. Grease cookie sheet.
Blend sugars and shortening together .
2. Add beaten eggs.
3. Sift together flour, salt, baking soda, and baking powder and add to creamed mixture.
4. Stir in vanilla, coconut, oats, and nuts; mix well.
5. Drop by teaspoonful onto cookie sheet. (I used my cookie scoop that holds 1 tablespoon water.)
6. Flatten cookies with the bottom of a glass (or with your fingers).
7. Bake until light brown, 8 to 10 minutes. Do not overbake.
8. Remove and cool on wire rack.
