Lemon Zucchini Bread with lemon glaze

  • 2 C. all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 C Vegetable Oil
  • 2/3 C sugar
  • 1/2 C Buttermilk
  • Juice of 1 lemon ( or 2 Tbsp lemon juice )
  • Zest of 1 lemon
  • 1 C Zucchini-grated (peeled or unpeeled)
  • Lemon Glaze: mix together well
  • 1 C Powdered Sugar
  • Juice of 1 Lemon (or 2 Tbsp Lemon Juice)

Step 1

Preheat oven to 350` Grease and flour a 9x5 loaf pan, set aside

In a large bowl, blend flour, baking powder and salt; set aside

In medium bowl, beat 2 eggs well, then add oil and sugar, blend well. Then add the buttermilk, lemon juice and lemon zest; blend well. Fold in zucchini and stir until well mixed.

Add this mixture to the dry ingredients in the large bowl and mix, but don't overmix.

Pour batter into prepared loaf pan and bake for 45 minutes, or til toothpick comes out clean.

Cool in pan 10 minutes, make glaze and pour over pan
