Quick Cherry Dessert
I made this quite often to serve for Bible Study
- 1 Cup Butter or margarine, softened
- 1.5 Cups Sugar
- 4 Eggs
- 1 tsp Almond extract
- 2 Cups all-purpose flour
- 2 tsp Baking powder
- 1 can (21 oz) Cherry pie filling
- Powdered Sugar to dust over top - optional
Preparation time 10mins
Cooking time 55mins
In large mixing bowl, cream, together the butter and sugar. Add the eggs. Beat until light and fluffy.
Add the almond extract. Stir in the flour and baking powder. Mix until smooth
Butter a 13 x 9 pan. Turn the mixture into the pan.
Spoon the pie filling into the cake, in 16 spots, spacing 4 spoonfuls in each direction.
Bake at 350` for 45 to 50 minutes or til golden brown. Filling will sink into the cake while baking.
To serve, cut into 16 pieces.
Place bottom side up on serving plate. Dust with powdered sugar, if desired. Spoon slightly sweetened whipped cream over each serving, if desired. This is great served warm.
*Can also use Blueberry Pie filling instead of Cherry
