SWORDFISH - Pan Roasted Swordfish w/Compound Butter

Ingredients

  • 1 tablespoon olive oil
  • 1 1-inch thick swordfish steak, cut into 4 - 6 ounce pieces, skin removed
  • Compound butter of choice

Preparation

Step 1

Preheat oven to 400°F.

Heat oil in heavy large ovenproof skillet over medium-high heat.

Sprinkle swordfish with salt and pepper. (Can marinate in advance, if you'd like, in which case pat dry before proceeding)

Add swordfish to skillet. Cook until browned, about 3 minutes.

Turn swordfish over and transfer to oven. Roast until just cooked through, about 10 minutes longer.

Transfer swordfish to plates, top with a slice of compound butter and serve.
