Beef & Spinach Quiche

Ingredients

  • 1 baked 10" pie shell
  • 3 Tbsp. butter
  • 1 cup diced onion
  • 1 lb. ground beef
  • 1-10 oz. pkg. frozen chopped spinach, thawed
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. ground nutmeg
  • 2 large eggs
  • 1 cup heavy cream
  • 1/2 cup grated cheddar cheese

Preparation

Step 1

In skillet, melt butter and add onion and cook until soft. Add beef and cook until meat loses its red. Drain. Squeeze spinach to remove moisture.

In bowl mix beef, onion, spinach, and spices. Beat eggs with cream and stir into meat mixture. Pour into pastry shell and sprinkle with cheese.

Bake 30 minutes at 375* until brown and filling is set. Let stand 10 minutes before slicing.
