Ingredients

  • 3 cups Asparagus, Diag Cut 1-inch
  • 1 cup Cannellini Beans, Drained
  • 1/2 cup Radishes, Thinly Sliced
  • 1/2 cup Feta Cheese, Crumbled
  • 2 tablespoons Green Onions, Thinly Sliced
  • 2 teaspoons Lemon Juice
  • 1 teaspoon Mint, Chopped
  • 1 teaspoon Olive Oil
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Pepper

Preparation

Step 1

Steam asparagus, covered, for 2 minutes or until crisp-tender. Rinse with cold water and drain. Combine asparagus, beans, radishes, feta cheese, and green onions in large bowl. Combine the juice and remaining ingredients in small bowl; stir well with a whisk. Pour over asparagus mixture and toss gently to coat.
