BACON AND EGG BREAKFAST MUFFINS

Ingredients

  • 2 cups flour
  • 1/3 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • pinch cayenne pepper
  • 1 cup shredded gouda cheese
  • 4 strips of crumbled bacon
  • 1/4 cup chopped green onions
  • 1 cup 2% Evaporated milk
  • 1/3 cup melted butter
  • 1 egg, lightly beaten
  • 6 hard boiled eggs, halved crosswise

Preparation

Step 1

Prehead oven to 375.

Line 12 muffin cups with paper liners. Whisk flour, salt, powder and pepper and sugar. Stir in 3/4 cup cheese, bacon and onions. In separate bowl mix milk, melted butter and egg - stir into flour mixture just till moistened. Put in muffin cups. Nestle 1/2 boiled eggs - cut side up into each cup. Sprinkle with cheese.

Bake 18-20 minutes till tops are golden.
