Ingredients

- 3/4 cup Minute Rice
- 2 3/4 cups milk
- 1/3 cup sugar
- 1 tbs butter
- 1/2 tsp salt
- 1/2 tsp vanilla
- 1/4 tsp nutmeg
- cinnamon
- 1/2 cup raisins
- 1-1/2 c. heavy cream
- 1/4 c. sugar
- 1 tsp. vanilla
Preparation
Step 1
Preheat oven to 350.
Combine minute rice, milk, sugar, raisins, sugar, butter, salt, vanilla, nutmeg in a buttered one quart baking dish. Bake for one hour, stirring after 15 minutes and again when pudding is done.
When cooled, use a sieve to drain out excess milk.
Whip cream with sugar and vanilla. Fold into rice mixture. Chill.
Sprinkle with cinnamon. Serve.
