Ingredients
- 1 sweet potato
- 1 yukon gold potato
- 4 small beets
- 1 red pepper
- 1/2 red onion
- 8 mushrooms
- 2 carrots
- 1 tsp thyme
- 1 tsp rosemary
- 3 garlic cloves, minced
- 1/4 c oil oil
- 1 tsp salt
- 1/2 tsp pepper

Step 1
preheat oven to 450 degrees.
dice all vegetables the same size. mushroom do not need to be diced.
combine the thyme, rosemary, garlic, oil, salt and pepper in a large bowl. add the vegetables and stir to coat. spray baking sheet and put vegetables on sheet. cook for 40 minutes and stir a couple times while baking. vegetables are done when you can easily pierce the potatoes with a fork.
