Creamy Tuscan Garlic Tortellini Soup

  • 2 cups Chicken, cooked and shredded
  • 3 cloves Garlic
  • 2 cups Spinach
  • 1 28 ounce can Tomatoes
  • 1 15 ounce can White beans
  • 1 White onion, small
  • 4 cups Chicken broth
  • Pasta & Grains
  • 9 oz Tortellini, refrigerated
  • 1 tbsp Italian seasoning
  • 1/4 tsp Pepper
  • 1 tsp Salt
  • 2 tbsp Butter
  • 1 cup Heavy cream
  • 1/4 cup Parmesan cheese, grated



Step 1

In a large pot over medium heat, heat up the butter. Add onion and garlic and cook until tender. Add chicken broth, diced tomatoes, white beans, heavy cream, parmesan cheese, italian seasoning, salt and pepper. Bring to a simmer.

Add the chicken, tortellini, and spinach. Let simmer for 10 minutes to thicken up and for the tortellini to cook.
