Ingredients

  • 200 g Bread flour
  • 200 g All Purpose Flour
  • 15 g Active dry yeast or 30g fresh yeast
  • 10 g Salt
  • 30 g granulated sugar
  • 1 tsp Vanilla extract
  • 150 ml Milk, chilled
  • 100 g large eggs, chilled
  • 80 g Unsalted butter

Preparation

Step 1

Step 1 In the bowl of your stand mixer fitted with the dough hook, mix dry ingredients. Add
the eggs and milk and mix to combine. Once the dough comes together, set the speed
to medium and mix for 2 min. Scrape down the bowl and the hook, then mix for 4 min
more. The dough should become firm and somewhat stretchy. If it keep sticking to the
hook, simply keep scraping it off.
Step 2 While the mixer is running, add the softened butter. Scrape down the bowl and dough
hook a few times making sure to scrape the dough on the bottom of the mixer up to
the top. It should take you 4 min.
Step 3 Increase the mixer speed a bit and mix for 4 min. more. Scrape the bowl and hook
again and continue to mix until the dough is smooth and shiny. about 4 min more. At
this point, the dough should make a slap-slap sound against the sides of the mixer
bowl/
