Ingredients
- 1 C. Boiling Water
- 1/2 C. Dates (chopped)
- 1 t. Baking Soda
- 1 C. Brown Sugar(packed)
- 1 Egg
- 1 1/4 C. Flour
- 1 C. Pecans (chopped)
- 1 t. Vanilla Extract

Preparation
Step 1
1. In a large bowl, Combine Boiling Water, Chopped Dates and Baking Soda; set aside.
2. Beat together Brown Sugar and Egg for about 2 minutes in a separate mixing bowl; add to date mixture. Stir in Flour, Nuts and Vanilla; pour into 3 greased and floured 6x3 loaf pans.
3. Bake at 350 degrees for 30 to 35 minutes or until a wooden toothpick inserted in the center comes out clean; leave in pans 5 minutes.
4. Turn out on a wire rack to cool. Makes three loaves.
