Pork Loin and Sweet Potato Hash

Ingredients
- 4 cups cooked pork loin
- 5 cups sweet potatoes, peeled and cubed
- 1/2 cup dried cranberries
- 1/2 cup red onion, diced
- 1/4 cup chicken broth
- 1/4 cup brown sugar, packed
- 3 tablespoons honey
- 1/2 teaspoon cinnamon
- 1 pinch thyme
- 1/4 cup butter
- salt and pepper to taste
- olive oil

Preparation
Step 1
Cube coked pork loin. ( I used leftover pork roast from the freezer from a previous meal)
Peel sweet potatoes. Cut into cubes the same size as you cut the pork.
In a large skillet add 1/4 cup butter over medium low heat. Once melted add potatoes and diced onion. Add enough olive oil so the potatoes get a good coating. Add a pinch of thyme and black pepper. Cook with lid on stirring every few minutes until the potatoes are fork tender. Ad the dried cranberries, cinnamon, sugar and honey, mix well and add salt to taste. Add cooked pork loin and broth, mix altogether, heat for a few minutes longer, just enough for pork loin to warm.
