CHICKEN BREASTS IN LEMON SAUCE

Ingredients

  • 6 T BUTTER
  • 12 oz mushrooms
  • 6 boneless breasts
  • flour
  • 1 c chicken broth
  • 1 c heavy cream
  • 3 T lemon juice

Preparation

Step 1

Melt 3 T butter in skillet and brown mushrooms
Remove mushrooms and put in 3 T more butter
dredge breasts in flour with some salt and pepper
put in skillet with butter and cook 5 minutes on each side
remove breasts
add broth and bring to boil scraping pan
simmer until you have 3/4 c or a little more
add cream and lemon juice
cook until thickened
put chicken and mushrooms back in and cook 15-20 minutes
