- Raspberry sherbet (raspberry sorbet would also work)
- 1 cup sprite or 7-up
- 1/4 cup pineapple juice
- Pink champagne
- Sweetened whipped cream (optional)
- Fresh raspberries for garnish (optional)

This pink champagne float was so fun to make and don’t worry I didn’t drink it. I only took a sip for taste testing and let me tell you it was hard to put that glass down and not chug away!! Only 19 weeks to go before this baby is born and then I will be able to fully enjoy this tasty drink!
This is definitely a fruity drink which is not my husband’s cup of tea. He prefers whiskey. The only way I can drink hard liquor is if it tastes like kool-aid. I know, I’m a weenie!
I used raspberry sherbet in this but you could also use raspberry sorbet. I just like the creaminess the sherbet adds to the drink. I also added in pineapple juice, sprite (or 7-up could be used) and topped it with freshly whipped cream. The whipped cream is purely optional but I am a little crazy and wanted to make this pink champagne float over the top.
The color of this drink would make it perfect for bridal showers, girl’s baby showers, Mother’s Day or just any special ladies get together! You could even set it up so your guests could make their own drink. Just mix up the pineapple and the sprite and pour into a pitcher. Set this on your table next to the raspberry sherbet and pink champagne then let your guests build their own drink!
Yields Yields 2-4 servings
In a glass of choice place in a couple of scoops of sherbet.
In a small measuring glass mix the sprite and pineapple juice. Pour desired amount over the sherbet. I used about a 1/4 of the pineapple/sprite mix for 1 serving. Top glass with pink champagne and a dollop of sweetened whipped cream if desired. Serve immediately.
If you would like to make this a DIY station at a party adjust accordingly to the number of guests you will be serving. Mix the pineapple juice and sprite in a large pitcher. Place next to the raspberry sherbet and bottles of champagne. You could use a can of reddi whip if you want the whipped cream option. Then let everyone build their own to suit their tastes! ?
