Ingredients
- 6 ears corn
- 2 tbsp solid butter
- 1/4 cup hot sauce
- 2 chipotle peppers in adobo sauce, chopped
- 1 sweet onion, chopped
- 1/2 cup cilantro chopped
- 1 rad bell peppers, seeded and chopped
- 2 tbsp lime juice
- 2 garlic cloves minced
- '1/2 tbsp chili powder
- 1/2 tbsp extra virgin olive oil
- 1/4 cup shredded Partmesan

Preparation
Step 1
Leave a few husks on each cob, soak in cold water for 15 minutes.
Preheat grill to 350 Pull back the husks on each cob without removing them. Discard silk.
Brush kernels with butter, fold husks back over corn and place on grill to roast, Turning frequently until kernels are softened.
Cut corn off cob into large bowl. Add remaining ingredients: magnate at room temp 2 hours.
