Ingredients
- 4 boneless skinless chicken breast halves (6 oz each)
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 Tbsp canola oil
- 1 c chicken broth
- 3 Tbsp while balsamic vinegar
- 1/2 tsp minced fresh rosemary
- 2 tsp cornstarch
- 1-1/2 tsp sugar
- 2 medium unpeeled pears, each cut into 8 wedges
- 1/3 c dried cherries or dried cranberries
- Fresh rosemary sprigs, optional
- I think it could have used more sauce - consider doubling it.
Preparation
Step 1
Sprinkle chicken breasts with salt and pepper.
In a large nonstick skillet, hear oil over medium-high heat.
Add chicken; cook until a thermometer reads 165º, 8-10 minutes. Remove.
Meanwhile, stir together next five ingredients until blended. Pour into skillet; add the pears and dried cherries. Bring to a boil over medium-hign heat; reduce heat and simmer, covered, until the pears are tender, about 5 minutes.
Return chicken to skillet; simmer, uncovered, until heated through, 3-5 minutes.
If desired, serve with fresh rosemary sprigs.
