Ingredients
- 3/4 cup P.A.N. Pre-cooked White Corn Meal
- 3/4 cup brown rice flour
- 1/2 cup invert sugar
- 2/3 cup white sugar
- 1 cup unsalted butter, room temperature
- 1/3 teaspoon salt
- 4 eggs
- 1 1/3 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 cup natural yogurt, sugar free
Preparation
Step 1
Preheat the oven to 325 °F. Grease and flour a mold of 8 inches.
Cream the butter for 3 minutes on medium-high speed in an electric mixer. Drizzle the white sugar and mix for 2 more minutes, until the batter turns pale and has doubled in volume. Lower the batter from the sides of the bowl with a silicone spatula. Set aside.
Mix P.A.N. Pre-cooked White Corn Meal, brown rice flour, baking powder and salt in a bowl. Set aside.
Add the eggs in another bowl using with the electric mixer on low speed and add the inverted sugar in three parts. Once everything is incorporated, increase the speed until you have a homogeneous mixture. Add the vanilla extract.
Add the eggs mixture to the butter and blend until you have a homogeneous mixture.
Incorporate the dough, intercalating with the yogurt, starting and finishing with the dry ingredients, keep in mind to lower the mix from the sides of the bowl so that everything blends well.
Pour the batter in a greased mold, and bake for 40 minutes approximately.
Remove from the oven and let it rest for 25 minutes before unmolding.
