WINGS*****Spicy Dry Hot Wings (Actifry)

03/02/17 - This is pretty close to what we're looking for. Dan loved them and said he could take a little bit more heat with them. I didn't try the hot sauce at the end so that's an option for a little extra heat.
04/03/17 - I added the Peri Peri which improved the heat profile but I used too much of the blend and they were a bit over-dressed. Add the spice blend a teaspoon at a time until the wings are well (but not over) coated.

Ingredients

  • SPICE BLEND (Makes 22 teaspoons):
  • 2 pounds chicken wings about 24 pieces
  • 1 tablespoon olive oil
  • 4 - 5 teaspoons spice blend
  • 4 1/2 teaspoons chili powder (I used half Ancho and half de Arbol, but any combo should work)
  • 1/4 teaspoon chipotle chili powder
  • 1 tablespoon sweet smoked paprika
  • 2 1/4 teaspoons ground cumin
  • 3/8 teaspoon ground cayenne pepper
  • 2 1/4 teaspoons garlic powder
  • 2 1/4 teaspoons onion powder
  • 2 1/4 teaspoons kosher salt
  • 2 1/4 teaspoons ground black pepper (from the jar)
  • 1 tablespoon Peri Peri Blend (PC Black Label)
  • blue cheese dip, to serve

Preparation

Step 1

Combine the dry rub ingredients in a small bowl.

Pat the wings dry and place in a large bowl. Drizzle with the olive oil and massage the spice rub into the wings. Cover and refrigerate until ready to cook, removing from the fridge about 1 hour before cooking.

Place the wings in the ActiFry pan and set the machine for 30 minutes. When 5 minutes remain, drizzle with the Frank's, if using (Haven't tried yet).
