Ingredients
- 1/2 cup P.A.N. Sweet Corn Mix
- 3/4 cup all-purpose flour
- 1 1/2 tablespoons sugar
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups buttermilk
- 2 eggs
- 2 tablespoons melted butter + 1 tablespoon to grease the pan
- 2 medium bananas, pureed
- 1/2 cup grated coconut, toasted
Preparation
Step 1
In a bowl, combine the P.A.N. Sweet Corn Mix, all-purpose flour, sugar, baking soda, baking powder, grated coconut and salt. Set aside.
In another bowl, combine the buttermilk, eggs, melted butter and banana puree until thoroughly combined. Add the wet ingredients to the dry ingredients and blend well until a thick batter is formed. Let sit for 3 minutes.
Heat a pan or griddle on medium-low and grease with a bit of butter. Using a ladle, pour a bit of the batter onto the pan in the shape of a circle. Cook for 2-3 minutes. Flip and cook for 3 more minutes.
Serve hot with maple syrup, honey or jam.
