Thyme Roasted Carrots

Ingredients

  • 2 lb. medium carrots, peeled and cut on deep diagonal into 1/2" thick slices
  • 1 1/2 Tbs. olive oil
  • 1 1/2 tsp. fresh thyme leaves
  • 1 1/2 Tbs. butter

Preparation

Step 1

Preheat oven to 400°
Toss carrots, thyme and oil in large bowl. Sprinkle generously with salt and pepper. Spread carrots in a single layer on a jelly roll pan. Dot with butter. Roast until carrots are tender and brown, stirring occasionally, about 40 minutes.
