Roasted Asparagus

Ingredients

  • 1 pound fresh asparagus
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon grated lemon rind
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 2 tablespoons olive oil

Preparation

Step 1

Preheat the oven to 400 degrees. Snap off rough ends of asparagus. Arrange asparagus in a single layer in a rimmed baking sheet.

Sprinkle with cheese, lemon rind, salt, and pepper. Drizzle with oil. Bake, uncovered, for 9 minutes or until tender.
