Preparation

Step 1

Heat the oil in a large pot over medium-high heat.
Add the popcorn kernels. Shake it all around.
Cover and cook until the popping starts. Shake it now and then, holding the lid down.
Take the pot off the stove when the popping quiets down to almost nothing. About 4 minutes.
Sometimes I let some steam out as it is popping. I'm still experimenting to see if this is better or not.
Drizzle with butter, if you're using it. Replace the lid and shake to distribute the butter.
Sprinkle with salt. Cover and shake again.

Seasoned Option
The recipe calls for putting the seasonings (except the cheese) right in with the kernels. Then, once popped, follow the same butter & salt routine as above, then add the cheese and shake one more time.
However, I didn't care for the seasonings in the popcorn. I pop the kernels in the oil and mix the seasonings in a separate bowl. Once the popcorn is popped, I add the seasonings then cover and shake. Followed by the cheese with more shaking.
Experiment on your own and see what you like. And don't forget to try your favorite seasonings.
