Ingredients
- 2 1/2 pounds boneless pork loin roast
- salt
- pepper
- 1 c. real maple syrup
- 4 tbsp. Dijon mustard
- 2 1/2 tbsp. apple cider vinegar
- 2 1/2 tbsp. soy sauce

Preparation
Step 1
1. Preheat oven to 180.
2. Clean pork of all silver skin and trim fat. Season with salt and pepper.
3. Stir together the maple syrup, Dijon, vinegar, and soy sauce in sauce pan. Heat to boil, then reduce until sauce coats the back of a spoon.
4. Place pork in a shallow roasting pan, then coat with glaze.
5. Place pork in the preheated oven, uncovered, for about 3.5 hours, or until internal temperature reaches 160 degrees.
