Mushrooms Florentine

Ingredients

  • 1 lb. mushrooms
  • 2 10-oz. pkgs. chopped frozen spinach partially cooked and well drained
  • 1/4 cup chopped onion
  • 1 tsp. salt
  • 1/4 cup melted butter
  • garlic salt to taste
  • 1 cup shredded cheddar (or more)

Preparation

Step 1

Wash and dry mushrooms. Slice off stems. Sauté caps and stems with a few Tbs. butter until brown, browning cap side of mushrooms first. Line a shallow 10" casserole (about 1 1/2" deep) with spinach which has been seasoned with salt, onions, and melted butter. Top with 1/2 cup cheese. Arrange the mushrooms, stems first, then caps, cap side down, over spinach. Sprinkle with garlic salt. Cover with remaining cheese. Bake 20 to 30 minutes at 350° or until cheese is melted.

May be prepared in advance and refrigerated until ready to bake.
