Ingredients

  • 2 large carrots, peeled and sliced
  • 2 onions, quartered
  • 2 leeks, sliced
  • 1 stalk celery, chopped
  • 1 tomato, halved
  • 2 cloves garlic, peeled
  • 2 sprigs fresh herbs (e.g. thyme, oregano, etc)
  • 1 bay leaf
  • 6 peppercorns
  • 1 Tbsp yeast extract (optional)
  • 2 quarts water

Preparation

Step 1

Place all of the ingredients in a large saucepan and bring to a boil. Simmer, uncovered, for 45 minutes, then strain. Cool and refrigerate, or freeze until ready to use.
