Ingredients
- 2 large carrots, peeled and sliced
- 2 onions, quartered
- 2 leeks, sliced
- 1 stalk celery, chopped
- 1 tomato, halved
- 2 cloves garlic, peeled
- 2 sprigs fresh herbs (e.g. thyme, oregano, etc)
- 1 bay leaf
- 6 peppercorns
- 1 Tbsp yeast extract (optional)
- 2 quarts water

Preparation
Step 1
Place all of the ingredients in a large saucepan and bring to a boil. Simmer, uncovered, for 45 minutes, then strain. Cool and refrigerate, or freeze until ready to use.
