Chicken and Artichokes

I just decided to do my own version of Chicken and Artichokes and it was a hit with my family.

Ingredients

  • 3

    pd skinless, boneless chicken breast, cut to bite size pieces

  • 1

    pkg dry good season italian dressing

  • 1

    Onion, sliced

  • 1/4

    pd fresh mushrooms, sliced (optional)

  • 1

    can (28 oz) Crushed or diced tomatoes

  • 1

    14 oz Jars of Marinated Artichoke hearts (or 2 7 oz jars)

Directions

In a large skillet, cook bite size chicken on medium to high heat and sprinkle dry italian dressing on it; cook for 10 minutes. Add Onion (and mushrooms if you want and cook for another 10 minutes. Turn stove down to Medium to Low and add the crushed or diced tomatoes and Marinated Artichoke hearts and let it cook 10 minutes more. Serve over rice.
