SPINACH & TURKEY QUICHE W/SWEET POTATO CRUST

NOTE: To keep this as a true S meal, I don’t reccomended eating more than 1/6 (Of the pie pan) in one meal. Otherwise the sweet potato will add too many carbs. Serve it with a salad or extra veggies to fill you up. OR make it an E meal by using egg whites and sprinkling the top with a small amount of feta (I probably used about 1/4 cup and it was plenty).

Ingredients

  • 1 sweet potato, peeled and sliced thin (I used the side on my chesse grater like I was going to make scalloped potatoes)
  • 1 c. cooked turkey breast, chopped
  • 1 c. cooked spinach, chopped
  • 8 eggs
  • 3 Tbsp. almond milk
  • dash of garlic powder
  • feta chesse, enough to top

Preparation

Step 1

Spray a pie pan with olive oil. arrange sweet potato pieces around the bottom and edge to form a crust. (Be prepared, they shrink a lot when you back the crust!) Bake at 350 for about 15 minutes or until the potatoes seem cooked.

Layer turkey and spinach on top of the crust. Beat eggs, almond milk and garlic powder well, pour over top. Sprinkle with desired amount of cheese. Bake again at 350 for about 35 minutes or until cheese starts to brown lightly.
