large baking potatoes, scrubbed well
cup extra virgin olive oil
cup finely grated Parmesan cheese
tsp. garlic powder
tsp. onion powder
Preheat oven to 425 degrees. Pat potatoes dry and cut lengthwise into 1/2-inch thick slices. Turn each slice flat and slice again lengthwise into even 1/2 inch thick slides. Place potatoes in mixing bowl and add olive oil, seasonings and 1/4 tsp salt. Toss well to combine. Transfer the fries to a large baking sheet and arrange in one even layer, not touching. Roast, scraping the potatoes from the baking sheet with a metal spatula and turning them over halfway through, until golden brown, about 30 minutes. While potatoes are cooking, combine the cheese, paprika, garlic and onion powders and 1/2 tsp. salt in a small bowl to blend. When potatoes are crisp and brown, sprinkle with the paprika-parmesan salt. Serve hot.
