Grandmother's Coconut Cake

Ingredients
- 1 yellow cake mix
- 2 small boxes vanilla pudding ( I used sugar- free)
- Milk
- Coconut
- 7 minute icing
- 1 cup white sugar
- 1/3 cup water
- 1/4 teaspoon cream of tarter
- 2 egg whites
- 1 teaspoon vanilla

Preparation
Step 1
In 2 round cake pans, bake cakes as directed on package
When cool, cut each cake in half.
Make pudding but use a little less milk then is called for.
On each layer put a pudding layer (except on layer you ice)
For seven minute icing
1. In a saucepan mix water, cream of tarter and sugar. Cook over medium heat, until sugar is dissolved and mixture is bubbly usually takes 5-7 minutes. Like making simple syrup.
2. Whip up egg whites and vanilla to soft peaks, gradually add hot mixture while whipping constantly until stiff and shiny peaks form 7-10 minutes. Frost cool cakes and sprinkle with coconut. Make sure to put cake fridge.
