Ingredients

  • 1 med head cauliflower, cut up
  • 2 potatoes diced
  • 1 bag frozen green peas
  • 1 onion, diced
  • 4 cloves garlic
  • 3/4 t cumin
  • 1/4 t turmeric
  • 1/2 t chili powder
  • 1/2 t garam masala
  • 2 t ginger paste
  • 14 oz fire roasted tomatoes
  • fresh chopped cilantro

Preparation

Step 1

In large pot, dry saute onion, as it begins to stick, slowly add small amounts of water

Add 4 cloves garlic, and continue to saute until onions caramelize

Parboiled potatoes and cauliflower (cover in cold water, bring to boil on high, turn off heat, let sit for 5 minutes on burner, put in strainer) add peas to strainer

In small pan add cumin, turmeric, chili powder, and garam masala. Try roast till fragrant

Add parboiled potatoes and cauliflower and peas to large pot

Add fire roasted tomatoes, spices and ginger paste

Add 1 or 1 1/2 cups water

Cook on low heat, covered, until tender ( about 20 minutes)

Serve over rice with chopped cilantro
