Ingredients

  • 1 tsp grated orange rind
  • 2 cups fresh orange juice
  • 1/3 cup sweetened dried cranberries
  • 1/2 Tbsp butter or margarine
  • 1/2 tsp salt
  • 1/4 tsp ground cinnamon
  • 1 tsp minced fresh ginger
  • 1 x 10-ounce pkg couscous
  • 1/4 cup sliced almonds, toasted

Preparation

Step 1

1. Bring 1st 7 ingredients to a boil in a saucepan over medium heat. Remove from heat.

2. Stir in couscous. Cover and let stand 5 minutes. Fluff with fork and stir in almonds.
