Ingredients

- 2-3 tablespoons oil
- 2 large onions, minced
- 2 pounds ground beef
- 4 cubes parsley
- 2 tsp salt
- 2 tbsp kubbeh spice

- Dough
- 6 cups semolina
- 1/4 cup oil
- 1 tablespoon salt
- 2 1/2-3 cups water
- ____________________
- Soup
- 2 tbsp oil
- 1 large onion
- 3 zucchini peeled and sliced
- 3 carrots peeled and sliced
- 3 tbsp tomato paste
- 1 tsp salt
- 1 tsp lemon juice
- 1 tbsp sugar
- 1.5 tbsp paprika
- 3 qt. beef stock

Step 1
To make the filling, heat the oil in a medium pan, add the onion and fry until golden-brown. In a medium-sized pot, cook the meat until browned. If there is a lot of grease from the meat, drain and/or rinse the meat. Add the parsley and fried onion to the meat. Stir in spices and cook until the liquid evaporates. Transfer the mixture to a bowl and let cool.
For the kubbeh, stir together the semolina, salt and oil. Slowly add the water, mixed with your fingers until you get a soft dough.
For the soup
saute onions until lightly browned
add carrots and cook for 1 minute
add the rest of the ingredients bring to a boil and then simmer for 10-15 min. add 24 kubbeh and cook for another 45 min.
