Hazel's Baked Corn Pudding

Ingredients

  • 2 cans corn (drained)
  • 2 eggs (slightly beaten)
  • 1/2 t. salt
  • 2 T. sugar (1 T. Splenda)
  • 1/2 c. evaporated milk
  • 1/4 c. liquid from corn
  • 1/2 stick butter or margarine

Preparation

Step 1

Beat eggs, add salt, sugar, milk and liquid. Pour over corn in baking dish. Top with butter or margarine. Bake at 350° about 30 to 40 minutes.

To save time, put in a microwave for 5 or 10 minutes. Then transfer to a conventional oven. This works great. Adjust salt and sugar to your taste.
