Mediterranean Artichoke-Chicken Rice Salad

Ingredients
- 2 (6 oz.) jars marinated artichoke hearts, undrained
- 2 c uncooked Minute original rice
- 2 c chopped cooked chicken
- 1/2 c Kalamata olives, sliced
- 1 bunch green onions, sliced
- 1/2 c mayonnaise
- 1/2 t dried oregano
- 1/2 t lemon pepper
Details
Preparation
Step 1
Drain and coarsely chop artichokes, reserving the marinade
Cook rice. Stir in reserved marinade and cool
Combine artichoke, rice mixture, chicken, and remaining ingredients
Cover and chill 1-2 hours
Yield: 4 servings
