Using sweet potatoes, zucchini, and asparagus, here's a great alternative to fries.

Ingredients

  • Sweet Potato Fries
  • 1 lb sweet potatoes (you can get pre-cut)
  • 2 T olive oil
  • 1 tsp rosemary
  • 1 tsp salt
  • 1 tsp pepper
  • Zucchini
  • 1 cup Panko
  • 1/2 cup Parmesan
  • 1 T basil
  • 1 T garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 2 eggs for an egg dip
  • Asparagus
  • 1 cup crushed almonds
  • 1/3 cup Parmesan
  • 1 T garlic powder
  • 2 T oregano
  • 1 tsp salt
  • 1 tsp pepper
  • Dip
  • 1 cup Greek yogurt
  • 1 T lemon juice
  • 1/2 tsp salt
  • 1 T chives
  • 1/4 tsp pepper

Preparation

Step 1

For each, slice vegetables into fry-size (except asparagus - just trim) combine ingredients and coat.
For zucchini and asparagus, dip "fries" into egg and then coat.

Bake each for 20-25 minutes at 425.
