Baked Vegetable Fries

Using sweet potatoes, zucchini, and asparagus, here's a great alternative to fries.

Ingredients
- Sweet Potato Fries
- 1 lb sweet potatoes (you can get pre-cut)
- 2 T olive oil
- 1 tsp rosemary
- 1 tsp salt
- 1 tsp pepper
- Zucchini
- 1 cup Panko
- 1/2 cup Parmesan
- 1 T basil
- 1 T garlic powder
- 1 tsp salt
- 1 tsp pepper
- 2 eggs for an egg dip
- Asparagus
- 1 cup crushed almonds
- 1/3 cup Parmesan
- 1 T garlic powder
- 2 T oregano
- 1 tsp salt
- 1 tsp pepper
- Dip
- 1 cup Greek yogurt
- 1 T lemon juice
- 1/2 tsp salt
- 1 T chives
- 1/4 tsp pepper

Preparation
Step 1
For each, slice vegetables into fry-size (except asparagus - just trim) combine ingredients and coat.
For zucchini and asparagus, dip "fries" into egg and then coat.
Bake each for 20-25 minutes at 425.
