Crock Pot ITALIAN BREAKFAST CASSEROLE

----You do not have to cook this for 10 hours unless you want to start it before you go to bed and have it hot and ready in the morning. For dinner just cook for six hours in the slow cooker, high the first hour.

Ingredients

  • 1 (20 ounce) package Simply Potatoes Shredded Hash Browns
  • 1 lb. Italian sausage (casings removed), browned and drained (You could use a pound of already cooked Jimmy Dean sausage (regular) for a more breakfast flavor. Some of my family are not that fond of Italian sausage.)
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 1/2 cups shredded mozzarella cheese You could use provolone or Swiss cheese or any cheese you like
  • 12 eggs, beaten
  • 1 cup milk
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • On the side 1 medium size mild salsa Great with a dollop on top.

Preparation

Step 1

INSTRUCTIONS
Spray a 6-quart slow cooker with cooking spray.
Place half of the hash browns, sausage, onion, peppers, and cheese in the prepared slow cooker.
Repeat layers, ending with cheese on top.
In a large bowl, whisk together eggs, milk, Italian seasoning, salt, and pepper.
Pour egg mixture into the slow cooker.
Cover and cook on low for 10 hours.
Serve with a side of mild salsa goes great with this.
