Ingredients
- 6-7 cups diced russet potato
- 5-6 cups baby spinach
- 3 cups Water
- 2 cups Homemade low-fodmap Chicken stock/broth
- 2 cups diced Ham
- salt & pepper
Preparation
Step 1
Put stock and water in a large pot, add spinach, let wilt for 2-3 minutes. Add potatoes, cook for about 45 minutes. Add chopped ham, season to taste. The soup is done with the potatoes are easily smooshed when pressed against the side of the pot with a wooden spoon (I think it took mine 1.5 hours). You could also make this in a crcok pot and cook it on low for 6-8 hours, until the potato is soft.
