Tomato, Basil & Fresh Mozzarella Salad*

Ingredients

  • 1 small red onion, sliced thinly
  • 12 oz. fresh mozzarella, sliced
  • salt and pepper
  • 3/4 cup olive oil
  • 2 T. minced red onion
  • 1/4 cup balsamic vinegar
  • 2 tomatoes, sliced
  • 1/2 cup basil leaves

Preparation

Step 1

Stir the minced red onion and vinegar together, and wisk in the oil. Season to taste with salt and pepper. Toss the sliced red onion with 2 T. of the vinegrette. Arrange on plate overlapping cheese and tomatoes, top with basil, and spoon on remaining vinegrette.
