Ingredients

  • 6-8 large shrimp per person
  • 1 c baby spinach (optional)
  • 1/2 c onion diced
  • 1/2 c broccoli, diced
  • 1/2 c carrots, diced
  • 2 c cooked brown rice
  • 2 eggs
  • 2 TBS coconut oil
  • Sea salt/pepper to taste
  • Coconut aminos (optional soy sauce replacement)
  • 1-2 TBS dairy-free/soy-free butter (optional)
  • Sesame seeds (optional)

Preparation

Step 1

Shrimp – Peel and devein if needed, rinse/dry. Season with salt/pepper and other seasonings of choice. Heat
skillet to medium heat and add 1-2 TBS coconut oil. Cook shrimp for just 2-3 minutes each side, until no
longer transparent.
Fried Rice – Saute onions, broccoli and carrots (or whatever veggies you have leftover in the fridge!) until
slightly tender. Add spinach just until wilted. Add cooked brown rice. Scramble 2 eggs into side of frying pan.
Add dairy-free butter, coconut aminos (soy flavor) and sesame seeds (optional).
