Ingredients
- Kosher salt
- 4 ounces chevre
- 5 Tbsp extra virgin olive oil
- Red pepper flakes
- 3/4 cup walnuts, toasted and chopped
- 1/3 cup finely chopped fresh chives
Preparation
Step 1
When cooking pasta of your choice, add 2 generous Tablespoons of kosher salt to 4 quarts of water. Reserve 1 cup of the pasta water after cooking pasta to add to the sauce.
In a medium bowl, combine cheese, oil, and 1/4 tsp each of salt and red pepper flakes, stirring and mashing the cheese until smooth. Add to the cooked pasta along with 3/4 cup of reserved pasta water and combine until
well blended. Stir in walnuts and chives and serve.
Note: you can also add 4 cups of baby arugula into this pasta dish.
