Onion & Radish Pickles with Cilantro

Ingredients

  • 1/2 cup fresh lime juice
  • 2 Tbsp. sugar
  • 1 tsp. kosher salt
  • 1 1/2 cups thinly sliced white onions
  • 1 1/2 cups thinly sliced radishes (about 1 bunch)
  • 1 cup chopped fresh cilantro (1 bunch)

Preparation

Step 1

Whisk together lime juice, sugar, and salt until dissolved. Add onions and radishes, tossing to coat; chill 2 hours, tossing occasionally. Stir in cilantro just before serving. Serve pickles with your favorite tacos.
