Charred Greek Caesar Salad

Ingredients

  • 4 oz. feta cheese
  • 2/3 c. EVOO
  • 1/3 c. nonfat plain Greek yogure
  • 3 T lemon juice
  • 1 clove garlic
  • salt and pepper
  • 3 hearts romaine lettuce, halved lengthwise
  • roasted sunflower seeds

Preparation

Step 1

1. In a blender or food processor, puree feta cheese, EVOO, yogurt, lemon juice, garlic, and salt and pepper.
2. Grill romaine hearts on medium for about 4 minutes, until spots are charred; turn over.
3. Drizzle with yogurt dressing. Sprinkle with salt and pepper and roasted sunflower seeds.
