Ingredients
- Toppings:
- 1 bunch cilantro
- 1/3 cup almonds
- 3 T olive oil
- 2 t cumin
- 6 green onions
- 3 cloves garlic
- 2 jalapeno peppers - seeded
- 2 lb. shrimp
- 2 T lemon juice
- salt to taste
- avocado sliced
- cherry tomatoes halved

Preparation
Step 1
In blender or food processor:
Add all ingredients (only 2 T oil) until shrimp with 1/4 c water. Blend well about 1 minute to make a pesto sauce.
(You can marinate shrimp in pesto for at least 1 hour or skip right to cooking)
Heat remaining 1 T oil in pan.
Add shrimp (add with marinade if did that step) Cook shrimp until half done then add marinade and continue cooking until shrimp is completely cooked. Add lemon juice and salt to taste.
Transfer to plate topping with sliced avocado and halved cherry tomatoes. Serve over rice with salad for an entire meal.
