Ingredients

  • 1 lb ground spicy sausage - optional
  • 2 lb. white beans
  • 2 large carrots peeled and diced
  • 3 large celery stalks, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp each: dried rosemary, thyme, oregano
  • 10 Cups water
  • 2 T salt (add more at end if needed)
  • ground black pepper to taste
  • 1 28 oz diced tomatoes (I like fire roasted)
  • 6 Cups chopped spinach or kale (I like more chopped greens)
  • 2 Cups brown rice (optional)

Preparation

Step 1

Rinse beans in cool water.
add to slow cooker along with the carrot, celery, onion, garlic, bay leaf, and herbs
Add water.
Meantime - cook sausage if using.
Cover and cook on high for 3 hours or low for 6 hours.
Remove lid from slow cooker and add salt/pepper
Add diced tomatoes and sausage
Cook another 1 - 2 hours until beans are very soft.
Before serving stir in chopped spinach or kale.
Serve over brown rice (optional)
