Ingredients

  • 1/4 cup mayonnaise
  • 1 egg
  • 12 soda crackers, crushed
  • 1 teaspoon sambal oelek
  • 12 ozs crab pieces, well drained
  • 1/2 cup unbleached all purpose flour
  • 1/4 cup olive oil
  • 2 tablespoons mayonnaise
  • 10 cherry tomatoes
  • 30 mini fresh basil leaves
  • pepper to taste

Step 1

1. In a bowl, combine the mayonnaise, egg, crackers & sambal oelek.

2. add the crab meat to the mayonnaise mixture, stirring u7ntil it breaks into small pieces. Season to taste with salt and pepper.

3. Place the flour on a baking sheet or large plate. Set aside.

4. With your hands, shape the mixture into patties, using about 1 tablespoon of the crab mixture for each one. Place the crab cakes on the baking sheet. Dust them with flour.

5. In a large non-stick skillet, brown half of the patties at a time in the oil for 3 to 4 minutes on each side. Drain them on paper towels.

6. Place the crab cakes on a serving platter or board. Garnish with a little mayonnaise, a slice of tomato & basil leaf. Season to taste with salt and pepper. Serve immediately.

Notes: To Freeze and Reheat
Freeze the cooked bites on a baking sheet lined with parchment paper. Then transfer them into freezer sealable plastic bag. When serving the already cooked bites, heat them for 15 to 20 minutes on a baking sheet in the middle of a 350 degree preheated oven.
