Lemon Loaf Cake

  • 1 (15.25 ounce) box yellow cake
  • 1 (3.5 ounce) package lemon gelatin
  • 3/4 cup water
  • 3/4 cup vegetable oil
  • 4 large eggs, slightly beaten
  • 1 1/2 cups sifted powdered sugar
  • 1/4 cup fresh lime juice
  • 1/2 tsp grated lemon rind



Step 1

1. In a mixing bowl, combine yellow cake mix and dry lemon gelatin.

2. Add water, oil and eggs. Beat 3 min. on medium speed electric mixer.

3. Pour mixture into a greased 13" x 9" x 2" cake pan or a 9" x 5" loaf pan. Bake at 350 degrees (or 325 degrees if using a glass pan) for 30-35 min. or until done.

4. Remove from oven and prick top with fork or skewer. In a bowl, mix together powdered sugar, lemon juice and lemon rind.Pour over hot cake.
