Snow Pudding

Ingredients

  • 2 teas. plain unflavored gelatin
  • 1/4 c. cold water
  • 1 c. boiling water
  • 3/4 c. granulated sugar
  • Pinch salt
  • 1 Tbs. grated lemon rind
  • 1/4 c. lemon juice
  • 3 egg whites

Preparation

Step 1

Soak gelatin in cold water 5 minutes. Add the boiling water and stir until gelatin is dissolved. Add ½ c. of the sugar, salt, lemon rind, and juice. Cool until slightly thickened. Beat the egg whites until stiff, then add remaining ¼ c. of sugar while continuing to beat until stiff. Beat into slightly thickened pudding. Chill until set. Serve with Snow Pudding Custard Sauce.
