Scrambled Grains with Mushrooms

Ingredients

  • 2 Tbsp oil
  • 1 lb mushrooms, sliced
  • 2 cups cooked grains (brown rice or quinoa)
  • 1 small minced chile
  • 2 eggs, beaten
  • 2 Tbsp soy sauce
  • 1/2 cup scallions

Preparation

Step 1

Rinse, trim and slice mushrooms. Heat oil in large skillet over medium-high heat. Add mushrooms and sprinkle with salt and pepper. Cook, stirring, until brown, 5-10 minutes. Add cooked grains and chile. Cook 3-5 minutes. Add beaten eggs. Stir until set. Drizzle with soy sauce and sprinkle with scallions.
